Now that spring has arrived I have an abundance of eggs and one of my favorite recipes for eggs is Angel Food Cake. Of course I also like Quiche and would say I love these two recipes equally. My husbands favorite is the Angel Food Cake
12 fresh eggs, 14 if eggs are small or 1 1/2 cups of egg whites.
I beat the egg whites with 1 1/2 teaspoons Cream of Tartar till peaks form
Then add 1 cup of sugar a little at a time till the egg whites take on a glossy sheen.
Then add 1 1/4 teaspoon of salt (pinch)
1 1/2 teaspoon Vanilla ( a couple of cap fulls)
1/2 teaspoon Almond extract (one cap full)
In a seperate small bowl mix the following
1 cup Cake Flour
1 1/2 cups powdered sugar
then fold into egg whites a little at a time (1/4 cup at a time)
Pour into Angel food cake pan or you can use glass bread pans as I do. I just give the loaf pans a quick shortening coating. Bake at 375 for 30 to 35 minutes or till it springs back
This recipe is so good that it can be eaten alone or with your favorite fruit, jelly spread, etc.....

By far, my favorite cake. But strangely enough, I never make it. maybe because I could very easily eat the entire thing :)
I like angel-food cake, and I'm always looking for recipes that call for eggs. What did you do with the yolks?

We have gone from 4 or 5 dozen a week to 10 in the past 2 or 3 weeks. Gotta love the changing of the seasons eh!
